Fruit Cocktail Cake with Cream Cheese Frosting

1-1/2 c sugar

2 eggs
1/2 t salt
2 c flour
2 t baking soda
2 c fruit cocktail/fruit salad, including juice
1/2 c chopped pecans or walnuts, if desired

Mix all ingredients, except nuts. Pour into ungreased pan and sprinkle nuts on top.
Bake at 350F (180C) for 50-60 minutes.

(I double the recipe for a 9 X 13 pan.)


Frost with cream cheese icing, as follows.

8 ounces cream cheese
1 t vanilla
1 t orange flavoring
1 T grated orange rind
2 c powdered sugar, enough to make spreadable

Mix together, ice cake, enjoy!
